How Not to Cook a Prime Rib

I've received a lot of great feedback from those who tried the "Method X" technique for cooking prime rib, and the verdict is in.... Guilty of medium-rare perfection on all counts! I'm sure glad you guys didn't screw it up and then try to blame me.

To celebrate our success cooking such an expensive and intimidating hunk of beef, I bring you this short, two-part video of a slightly different method. Enjoy!

Part 1 "Now that's a fire..."

Part 2 "The water seems to make it worse..."

Gingerbread Haka

A special holiday-themed dedication to New Zealand's national rugby team, the famous (and feared) All Blacks, and fellow ruggers everywhere.

Here's the real haka performed by the All Blacks. The looks on the opponents faces are priceless.

"Bite your teeth into the ass of life…"

This is my favorite scene, from my favorite food movie of all time. It's from Big Night, and features Ian Holm, giving a pep talk to Stanley Tucci, owner of a neighboring rival Italian restaurant. If you want to feel the agony and ecstasy of the restaurant business, rent this movie.

Holiday get-togethers can spur long, heated debates among family members about which DVD to rent after dinner. Well, here is a suggestion everyone should like. The movie is sweet, sad, hilarious, and shows everything that's great and horrible about the food business. Warning: This clip contains adult language. Enjoy!

Dear Santa, I've Been a Very Good Chef This Year. Can I Please Have a Large Block of Wood?

That's right, if you don’t have one yet, a large, thick (at least 4-inches) wooden butcher block cutting board should be on every cooks holiday gift list. One of the great pleasures in the kitchen is cutting on one of these sturdy boards. The feeling of working on these butcher blocks, compared to the thin plastic versions, is hard to describe. It's like the difference between sitting in a large leather recliner and a flimsy folding deck chair. By the way, the prices have really come down the last few years, and they are surprisingly affordable. I really like the combination of the butcher block cutting board as part of a kitchen cart. I actually included this in a list I just did on my American Food site entitled "The Top 10 "Must Haves" for Cooking Great American Food." If you follow that link you can also see some of the models I've suggested with brands and prices.

This video clip produced for About.com shows an easy 3-step method for cleaning and caring for these great cutting surfaces. I just had a question posted about the safety of wood vs. plastic. Both have pros and cons, and I do use both, but very much prefer the wooden butcher block for general use. If cleaned and sanitized, you should have no problems. As you'll see, I use a simple vinegar solution to sanitize. Some prefer a diluted bleach solution instead. There are many online articles regarding these issues, and I invite you to investigate for yourself. No mater how you clean and sanitize them, the third step, sealing the board with mineral oil, is the real key to a long happy relationship with your butcher block. Enjoy!

Introducing Ron Jeremy's Omelet Diet - Warning: This May Be the Most Disturbing 10 Minutes in Culinary Video History!

Adult film star Ron Jeremy, inspired by Christopher Walken's chicken video recipe, decided he would film his "famous" vegetable omelet. What follows is ten minutes of horrific cooking technique, lame jokes, and Ron's mullet in all it's dyed glory. The reason I called today's post the "Ron Jeremy's Omelet Diet" is for the simple fact that this video recipe is guaranteed to make you lose your appetite for several days after each viewing. With all the food you ate over the Thanksgiving holiday, this is the perfect way to trim off a few pounds before the Christmas feasts. Every time you feel like eating something you shouldn't, simply watch this clip and your hunger will quickly dissipate.

By the way, you can now finally admit you've watched a Ron Jeremy video! I was going to warn everyone to not let the kids watch this clip, but he butchers the attempts at dirty jokes so badly they are indecipherable. I'll apologize in advance for the nightmares this video will cause to viewers of all ages. Someone will have to explain to me how this man became the most popular adult film star in the world. Actually, I changed my mind; please don't explain this to me. Lastly, I should warn all of you right now, any comments regarding Ron's resemblance to me, only with longer hair, will be deleted immediately!

Due to a bug with the Safari browser on the Macs I had to remove this embeded video clip. It was playing automatically without the play button being pressed which rendered my warning useless. If you want to see the clip you can click here. Sorry, Ron.

Will a Change in the White House Mean the Return of America's Garden?

This animated video is from the folks at "Eat the View," a campaign to return some of the White House's lawn back into a fruit and vegetable garden, like our early presidents maintained and enjoyed. As we all face the tough times ahead, let's hope that one silver lining is the rebirth of "victory gardens."

I realize the new Prez has lots on his plate, but one thing he can do to help everyone get more on theirs, is to bring back America's Garden, and promote the rebirth of the backyard garden. If you want more info, check out eattheview.org.

The Best Grilled Ham and Cheese Ever

For some reason the WiFi network here at the hotel is not allowing uploads over a certain size, so you'll have to wait until tomorrow evening, when I return to San Francisco, to see this video

This stunning specimen of a grilled sandwich was created with scavenged ingredients found in the hotel, and was cooked in my room without the benefit of a kitchen.

Back By Popular Demand…The Secret Underwater Pomegranate Trick

I already ran this video demo a long time ago, but when my mother sent me a photo of some “Sweetheart” pomegranates (below right), I thought it would be perfect timing to rerun this clip since this is pomegranate season. By the way, I had never seen a non-red pomegranate before, but she reports the insides are as red and delicious as the traditional varieties. This is a short, but hopefully useful demo for how to remove all those pomegranate kernels without making a big mess. These are great on any fall/winter salads or soups, and of course desserts.

The Iranians Have Crossed the Line and Must Be Stopped!

All this talk recently about possible military actions against Iran has been very troubling. I hoped our recent history had served as an important reminder of the benefits of diligent and effective diplomacy. But, recent events in Tehran have changed my attitude, and I think we may need to respond with force.

What has me all worked up? Iran is trying to set the world record for longest sandwich! A team of chefs in Tehran, mostly women forced to cover their hair, and not for sanitation reasons, have reportedly built the world's longest ostrich sandwich. You can watch the report below.

This is an outrage, and I will not bury my head in the sand, and pretend this affront to our entire culinary identity didn't happen. Sorry Iran, but long sandwiches, and other grossly oversized fast food is our thing.

Luckily, the hungry crowd attacked the sandwich and ate it before its length could be officially recorded (true) - like an episode from whatever the Iranian equivalent of the Simpsons is. You know, maybe we are not so different after all.

Tho X. Bui Gets "Mileage" with His Hollandaise T-Shirt

Tho X. Bui, Foodwish.com fan, and fashion icon, sent me this Youtube clip of, well, I'll let him explain, "…for the 2008 Tour de Fat (one less car!) parade, my friend Joe Strutmann and I rigged up my homebuilt tandem trike and turned it into a mobile grilling station. We served two-dozen burgers and collected a little bit of money for the UMOM's New Day Family Shelter (shelter for homeless families). A fantastic fun time. I'm wearing my awesome "A Hollandaise Can Sense Fear" T-shirt from Foodwishes.com."

He raised money for charity, and promoted my shirt! Well done!

Can You Smell It?

This tennis ball-sized black truffle was brought to our table last night so we could smell it and decide if, for $15 extra dollars, we wanted it shaved over one of our courses. We decided to just go with the free whiff. It was our 9th wedding anniversary (and 19th year of cohabitation), and we dined at La Folie, one of San Francisco's top French restaurants. We had a great time, and a great meal, and Chef Roland Passot even shaved some of the truffle over our scallop appetizer as an anniversary present!

A Perfect Time for Pumpkin Pancakes

A friend sent me a nice note recently that his wife had made these pumpkin pancakes for dinner, and that they were thoroughly enjoyed by all. I always appreciate those kinds of messages, especially since they often serve as a reminder for doing seasonally appropriate recipe re-posts.

This was the week pumpkin made its yearly appearance into my life. On restaurant menus, on television, in store windows, on neighbors’ steps, and all over our living room…and dining room…and kitchen…and, well, you get the idea. So, to celebrate the beloved American gourd, I decided to rerun this tasty winter treat. Enjoy!

Slow Food Nation's Food for Thought Panel Discussion

Thanks to FORA.tv and Slow Food Nation, the panel discussion I attended during the SFN'08 event has been made available online. This panel is a who's who of the slow food movement, and I found the discussion to be fascinating on several levels.

The passion of the speakers is undeniable, their dedication to the mission is unquestioned, but beneath it all is a nagging frustration at not being able to fully answer the skeptics charges about how this "good, clean, and fair" food revolution will really take hold.

I left the lecture with almost as many questions as answers, but I also left with a smile, wondering how long it would be before food changes us, instead of the other way around.

This was a long discussion, so FORA.tv broke the video into two parts. This is part one. Enjoy!

George Clooney Update

Many of you may have been wondering what Clooney has been up to since he lost his gig as my online sidebar avatar. I’m sorry to report the news is not good. Apparently he took the dismissal much harder than anyone could have imagined. For those of you that are new to this blog, George served as a celebrity look-a-like for my profile photo for many months (you can see him pictured below during happier times). Once my secret identity was made public by About.com, I replaced Mr. Clooney’s photo with my own, and told him that his services would no longer be needed. At the time he sounded fine with it, and said he still would like to “stay friends.” We’ve all heard that one before.

Anyway, my Hollywood sources tell me that since he was removed from the site, he has really let himself go. As you can see from the photo, he has gained about 50 pounds, and friends say he basically lives on hot dogs, chocolate Pop-tarts, and root beer. George, if you are reading this, please get a hold of yourself! You still have the movie career, and all those beautiful women, and all that money. You’re going to be okay. You just need to move on.

The Roof, the Roof, the Roof is on Fire…

There was a rich family that lived in a large house in a small village. The rich family threw a party and invited the rest of the town. At this party, a few wealthy guests were given champagne and caviar, and the rest of the guests got cocktail franks and warm beer.

Later that evening, after most of the guests had left, some of the wealthiest guests joined the rich family in a drunken game of naked twister. Someone slipped on a cocktail frank that one of the poorer guests had dropped, and knocked over a candle. Soon the large house was engulfed in flames.

The rich, drunk, and naked guests ran out on to the street, and screamed for the gathering crowd to help them put out the fire. But the mob, still angry they were only fed cocktail franks and warm beer, shouted back that the wealthy family should put out the fire themselves since they started it. Water was in very short supply, and the wealthy family insisted that they needed some from every well in the town.

The townspeople argued that the family had the deepest well in town, and should have plenty to put out the fire. The rich family said the well was dry because they'd just had their servants wash their many cars. This angered the mob even more.

As they argued, the fire spread, and the entire town burned to the ground.

What do you think?
Like most of the politicians, I am clueless.
When there is a fire nearby, put it out, and then argue about what happened.
Let the mother burn, it may shake things up.
I like cocktail franks and warm beer!

Today's the Day - Tomorrow's the Way

I'm up to my ears in misenplace, and will be incognito until tomorrow, when I will share this 24-item tasting menu via video, photos, and text. Until then, grab a slice of pizza, and enjoy the day like it's the last day you will be able to taste garden-ripened tomatoes this year. Some slices are such sweet sorrow.

Getting Overexpose by Hungry Nation

When my friends at Hungry Nation were over here filming my “Fresh Five” secret ingredients, they also forced me, under threat of severe physical injury, to do an interview called a “Meet & Eat.” I spend most of my free time thinking of ways to avoid going on camera, so I’m really never comfortable (or very good) doing these things, but since they did such a great job on the production, and took the time to put this together for me, I feel the least I can do is show it off here. I’ve also included the full Mahi Mahi Ceviche video below. Enjoy!

Richard Simmons and the World's Most Dangerous Steamer

This clip from the David Letterman show has it all; Simmons' short-shorts and afro in all their glory, Letterman not even trying to hide how stupid he thinks the invention is, and a complete disregard for poor Richard's safety. This really shouldn't be on your Christmas list. To paraphrase Simmons, "this isn’t a go-go-cart!"

Hot Soup

Michele and I stopped for some Korean food on the way home from a thoroughly enjoyable trip to Berkeley Bowl. Sahn Maru, in Oakland, CA, is one restaurant that will never have a customer send back a bowl of soup for not being hot enough!

Directly below, you'll see the iPhone video I took of our spicy soft tofu soup. My phone was off at the time, so this was after it had cooled for a minute! It was the hottest soup I've ever been served.

When I posted to YouTube, I was amused to see that many others had filmed this same soupy scene, so I gathered a small collection. There is something mesmerizing about watching this soup boil in the cast iron pots. Below these, I've posted a video recipe for how to make this super-delicious soup! (you just need to find the pots!)

How to Make Korean Soft Tofu Soup (aka Stew)

Testing, 1, 2, Testing

Blogger recently added the feature of uploading video directly into these posts. So I thought I would test it out with an older, low-res, yet still incredibly delicious chicken recipe I previously posted using the standard YouTube embed. I'm curious if there is a big difference in quality. The other obvious advantage is I could post videos that would only be available to visitors of this blog, since I could avoid the need to upload to video sharing sites first, just to get the flash embed code.

If you have no idea what I'm talking about, don't feel bad, I'm not that sure either. Anyway, we are basically comparing the two clips. Any and all input is welcome, especially from tech nerds.

Here is the blogger video upload of The "Ultimate" Roast Chicken at same size as the YouTube version:

Here is the regular YouTube flash embed of the same clip:

Well, so what do you think?
